Most California wines that we carry at E-Ville Spirits & Wine here in Ellicottville, NY, under $20, are meant to be consumed within a year or two of release. Most of the worlds wines are meant to be consumed young. Whites are not cellared for long periods of time although there are exceptions such as some French grapes. Red wine can be cellared for longer periods of time. Some of the finest reds can be cellared for several decades. Key ingredient for cellaring wine is the type of grape and vintage.
